Pad Thai
Pad Thai is a very popular rice noodles dish made with the combination of meat, vegetables, and eggs. Here we are making pure vegan Pad Thai with Linguini style rice noodles, vegetables, sprouts and Pad Thai sauce. This is a low fat dish.
Method of preparation
For Pad Thai
- Boil about 5-6 cups of water in a big pan. Remove from heat. Immerse rice noodles in the hot water. Let it stand for about 8-10 minutes, stir occasionally. Noodles should be soft but firm. Drain well.
Ingredients
(serves 4)
For Pad Thai:
- Rice Noodles(linguini style)4 oz
- Shallots 1
- Spring (green) onions 1
- Beans sprouts 1 cup
- Chopped coriander leaves 2 tbsp
- Carrots 1 medium
- Cabbage 1 cup diced
- Salt 1 tsp or to taste
- Oil 1 ½ tbsp
For Pad Thai Paste:
- Tamarind paste 1 tbsp
- Red chili crushed ½-1 tsp
- Brown Sugar 1 tbsp
- Soya sauce ½ tsp
- Water 1 ½ tbsp
To serve:
- Roasted and crushed peanuts 2-3 tbsp
Rice noodles (linguini style) Boiled rice noodles
- Peel off, wash, and finely cut the shallot (we need juliens). Scrap the outer skin, wash, and cut the carrots in about two inches long and half inch wide thin slices. Wash, remove the roots, and cut the spring onions in one and half inch long pieces.

For Pad Thai Sauce
- In a bowl mix tamarind paste, brown sugar, soya sauce, and red chili in 1 ½ tbsp water. Mix well . Keep aside.

- Heat oil in the Wok on high heat. Fry shallots for 30 seconds. add carrots and stir for a minute. Now add rest of the vegetables, and fry for another minute.
- Add rice noodles to the stir fried vegetables. Mix well. Add pad Thai sauce and salt and stir well for a couple of minutes on high heat.
Stir Frying of vegetables
- Pad Thai is ready to serve. Garnish with crushed peanuts.
Variation :The original recipe has bok choy, Chinese cabbage. I have used cabbage which is always available in my kitchen.
I have used soya sprouts for this recipe , if you want moong sprouts, can be used too.
Sometimes I use honey roasted peanuts for this recipe.
